Abstract: The Cultural value of food is unquestionable. Every country has its own food culture and the richer the history of a country is, the more aspects the cuisine of that country will have. The art of culinary has developed over the years and is being perfected by generations after generations and thus is an integral part of the cultural identity of a community. This traditional knowledge system is essential for existence in all communities and is an important part of every culture Studying culinary tradition of a community or region not only provides perspective for examining the intangible cultural heritage of cuisine but also the Literature in this area contributes to understanding expression of culinary practices in the city . Traditional knowledge is the knowledge base of a particular society or community which has been generated over a period of time through the process of learning and sharing by its members. It takes several generation to refine or improve the knowledge base with expertise gained through experiences and is passed on from generation to generation. Ultimately, it becomes the integral part of cultural identity of a community. Likely the art of culinary was perfected by the Nawabs of Lucknow and the traditional knowledge systems which has developed as a part of community is still continuing and has intangible heritage associated with it. Studying culinary tradition of a community or region not only provides perspective for examining the intangible cultural heritage of cuisine but also the Literature in this area contributes to understand how cuisine has developed. Food is a physical and tangible component whereas foodways incorporates intangible traditions regarding food ingredients, practices and customs (Timothy & Ron, 2013). Foodways are the eating habits and culinary practices of a people, region, or historical period. With the craftsmanship association of memories and folklore is also there This thesis aim to study the culinary art of Awadh region which was patronized by the Nawab's of Awadh during their reign and was perfected by generations and is still practiced in the traditional form , and thus documenting the traditional spaces and provide a viable solution for preserving the knowledge system and the memories associated with it as well as sustainable development of the city through it .
